Signal 1: Order velocity
Orders per hour, measured against the category median in your catchment. A biryani restaurant with 6 orders/hour at dinner peak clears the median in most Tier 1 cities; 2/hour does not. Velocity is why the launch boost matters — it lets the system learn your ceiling. When velocity drifts below median, ranking follows within 72 hours regardless of ratings.
Signal 2: Rating density (not average rating)
Average rating is a vanity number. Rating density — net new 4★+ reviews in the last 30 days — is what the model weights. Signal 3: Menu-to-Cart (M2C) conversion
Of every 100 users who open your menu, how many add an item to cart? Target: 25%+ off-peak, 32%+ peak. Below 20% and the model reads the listing as low-relevance for the queries that brought traffic — ranking demotes within days. M2C is where menu engineering, photography and pricing intersect.
Secondary signals that gate the top slots
- KPT (Kitchen Preparation Time): ceiling 12 minutes; consistent breaches throttle visibility during peak.
- Cancellation rate: above 2% starts hurting; above 4% caps how high you can rank in any city.
- Image freshness: refreshed dish images in the last 45 days correlate with higher CTR from search rails.
- Offer participation: platform-wide offers give short-term velocity but compress margin — use surgically.
How the signals compound
Fix any one signal in isolation and you'll see a two-week bump that fades. Fix all three in the same cycle and ranking moves durably.
